About the Program

Students in SLU’s nutrition and dietetics master’s program choose from three concentrations. You can also choose to pursue a dual degree with a Master of Science in Nutrition and Dietetics and a Master of Public Health.

Three Concentrations

Nutrition and Physical Performance

This program is designed for professionals who have a baccalaureate degree in an allied health field. Coursework focuses on nutrition, health promotion, prevention, physiology and cardiovascular fitness.

Medical Dietetics

This program is designed for professionals who have a baccalaureate degree in an allied health field. Coursework focuses in the areas of education, administration and counseling as they apply to nutrition care.

Culinary Entrepreneurship

The program is designed for professionals who have a baccalaureate degree in nutrition or a related field and culinary experience. Coursework focuses on nutrition, sustainable food systems, entrepreneurship, finance, marketing and organizational management.

Program Highlights

SLU’s graduate nutrition and dietetics curriculum builds upon a strong foundation in the sciences and includes unique aspects such as the investigation of nutrition topics in the media, the study of ethnic meal patterns and hands-on exposure in clinical, culinary and management settings. Courses include classroom, lab and community experiences. Study abroad opportunities are possible through planning with academic advisers.

Curriculum and Program Details

Master’s students in SLU’s nutrition and dietetics program choose from three emphases: culinary entrepreneurship (34 credit hours), medical dietetics (34 credit hours) and nutrition and physical performance (34 credit hours).

You can pursue either full-time or part-time study in any of the master's emphases. Most classes are offered in the late afternoon or during evening hours, allowing you to work and attend classes. All of the emphases options require research, submission of results to a journal and satisfactory completion of a comprehensive oral examination.

Careers
After graduating with a master’s degree in nutrition and dietetics, you can work as a clinical dietitian, research dietitian, sports dietitian, community dietitian, consultant, chef/certified culinarian, food technologist, food journalist, nutrition educator/counselor, food and nutrition entrepreneur, food service manager, food scientist,  registered dietitian and much more.

Applicant Criteria

Most students admitted to SLU's nutrition and dietetics graduate program possess above-average GPA, sufficient GRE scores and sufficient TOEFL scores (for international applicants).

You’ll need the following items to apply:

Application Form and Fee
Transcript(s): All international students who did not attend school within the United States must have their transcripts evaluated by either the Educational Credential Evaluators (ECE) or World Education Services (WES).
Three letters of recommendation: Two letters should be from college professors/instructors and one should be from a work supervisor. When completing the application form, you must include the name and email address for each reference. This will initiate an email message requesting online completion of a reference form.
GRE Scores: The Graduate Record Examination is required with desirable scores of 150 in both verbal and quantitative sections and 4 in the writing section within five years of application. When requesting GRE scores from ETS, use the following coding: Saint Louis University Code: 6629, Nutrition Code: 0214.

Professional Goal Statement: A personal statement including your professional interests, goals, personal attributes, etc. qualifying you as a good candidate for the graduate program must be included. Please also include the concentration you wish to study.

Requirements for International Students

Application and Assistantship Deadlines

U.S. students should apply for the fall semester by July 1 and for the spring semester by November 1. International students should apply for the fall semester by May 1 and for the spring semester by October 1.

Students should apply for the summer program by April 1.

Students who want to be considered for assistantships should apply by March 31.

Applications are reviewed by a committee of nutrition and dietetic department faculty members.

SLU’s program in dietetics and its supervised practice program (dietetic internship) at Saint Louis University is currently granted accreditation by the Accreditation Council for Education in Nutrition and Dietetics (ACEND).
